Whoopie Pie Recipe

INGREDIENTS 
MAKES: 18

BATTER
250G UNSALTED BUTTER

  • 220G SOFT BROWN SUGAR
  • 1 EGG
  • 250ML SOURED CREAM
  • 8 TABLESPOONS UNSWEETENED COCOA POWDER
  • 250 PLAIN FLOUR
  • 1 TEASPOON BICARBONATE OF SODA
  • 1 TEASPOON SALT
1 TEASPOON PURE VANILLA EXTRACT

SPLASH OF MILK

  • FILLING
  • 250G UNSALTED BUTTER (ROOM TEMPERATURE)
  • 175G ICING SUGAR
  • 1 1/2 TEASPOONS PURE VANILLA EXTRACT

METHOD

  • Preheat oven to 180C. Line a baking tray with parchment or greaseproof paper.
  • Cream together butter, sugar and finally the egg in a large bowl. In a separate bowl, combine the cocoa, flour, bicarb and salt.
  • Add the dry ingredients to the mixture, add the milk, vanilla and soured cream mixture; beat until smooth.
  • Pour 6 equal amounts of batter (125ml) onto the lined baking tray.
  • Bake for 10 minutes or until when pressed the sponge keeps its shape. Remove from oven and cool them on a wire rack.
  • Make the filling and add it to a piping bag with star shaped nozzle. Add filling to each pie in equal amounts.
  • To decorate them simply sieve 150g icing sugar into a bowl adding water to make a smooth, spreadable icing. Add a few drops of food colouring and add any sprinkles that you like to finish them.
