GF carrot Cake Recipe



Following my last post highlighting the miracles of Bob's Red Mill GF Flour, it would be naughty not to share a great little recipe for a delicious GF carrot cake found on their site.

Ingredients

For the Cake:

  • 3 cups Gluten Free 1-to-1 Baking Flour 420g
  • 3 cups Granulated Sugar or organic cane sugar
  • 1 tsp Sea Salt
  • 1 Tbsp Baking Soda (yes 1 tablespoon)
  • 1 Tbsp Ground Cinnamon
  • 1 1/2 cups Walnuts chopped
  • Large Eggs room temperature
  • 1 1/2 cups Canola Oil
  • 1 Tbsp Vanilla Extract
  • 1 1/3 cups pureed cooked Carrots
  • 1 1/2 cups Shredded Coconut
  • 8 oz canned Crushed Pineapple drained
For the Frosting:
  • 8 oz dairy-free Cream Cheese can use regular
  • 1/4 cup Shortening 
  • 1/4 cup vegan butter
  • 4 1/2 cups Powdered Sugar
  • 1 tsp Vanilla Extract
  • 2 tsp Fresh Lemon Juice
