GF Carrot Cake Recipe
Following my last post highlighting the miracles of Bob's Red Mill GF Flour, it would be naughty not to share a great little recipe for a delicious GF carrot cake found on their site.
Ingredients
For the Cake:
- 3 cups Gluten Free 1-to-1 Baking Flour 420g
- 3 cups Granulated Sugar or organic cane sugar
- 1 tsp Sea Salt
- 1 Tbsp Baking Soda (yes 1 tablespoon)
- 1 Tbsp Ground Cinnamon
- 1 1/2 cups Walnuts chopped
- 4 Large Eggs room temperature
- 1 1/2 cups Canola Oil
- 1 Tbsp Vanilla Extract
- 1 1/3 cups pureed cooked Carrots
- 1 1/2 cups Shredded Coconut
- 8 oz canned Crushed Pineapple drained
For the Frosting:
- 8 oz dairy-free Cream Cheese can use regular
- 1/4 cup Shortening
- 1/4 cup vegan butter
- 4 1/2 cups Powdered Sugar
- 1 tsp Vanilla Extract
- 2 tsp Fresh Lemon Juice
